Recipe: Pumpkin Quick Bread Recipe

Pumpkin, pumpkin, pumpkin everything! It’s that time and we’re ready…

  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 2 cups pumpkin puree
  • 2 1/4 cups brown sugar
  • 4 eggs
  • 1 cup vegetable oil
  • 1/2 cup apple juice
  • 2 teaspoon vanilla extract
  • 1 cup walnuts, pecans, raisins or dried cranberries (optional)
Combine flour, baking soda, salt, cinnamon, nutmeg and ginger in a bowl and set aside.
Stir pumpkin, brown sugar, eggs, oil, apple juice, and vanillas extract together to fully combine.
Stir dry ingredients into wet mix until combined.
Stir in walnuts, raisins or cranberries, if desired.
Grease and flour two 8” or 9” loaf pans.
Pour batter evenly into loaf pans.
Bake at 350 degrees for 60-70 minutes, until inserted toothpick comes out clean.
Cool 10 minutes before removing from pans to finish cooling on a wire rack.
Allow to cool before freezing or serving.
